How often does Instagram update the following list?
The short answer
Instagram updates a following list instantly — the moment someone follows or unfollows an account, that change is reflected the next time the list is loaded. There's no delay or daily batch. Follow trackers, however, only capture changes each time they re-check the list, so how fresh your "recent follows" view is depends on how often the tracker refreshes.
On Instagram's side there is no update schedule to wait for: the follow graph is live. A follow you make now shows on your following list immediately.
The lag people notice is on the tracking side. A tracker can only report a change after it re-reads the list, so its refresh cadence — hourly, daily, on-demand — sets how quickly a new follow shows up in your view.
Why does my tracker show a follow a day late?
Because it hadn't re-checked the list yet. Instagram had the change instantly; the tracker only saw it on its next refresh.
Does refreshing more often risk the account?
A read-only tracker that never uses your password just re-reads public data. It doesn't touch or endanger the account it's watching.
